I could and might get busted for scanning this plate in and reproducing it without the consent of the kids over at The Sydney Morning Herald so this is as much an adoration of an amazing looking dish as an experiment in copyright infringement. A little bit hit and miss for me, the(sydney)magazine drops once a month as an insert into The Sydney Morning Herald but it has one of the best ideas in food critic Simon Thomsen's favourite dining moments of the month. (I'll disclose here that I spent a good 14 years cooking before turning to the net to earn a crust though that story is not for now). For me it's more about the beauty of the plates, works of art in themselves, than the actual flavours that are described. Peter Gilmore, head chef at Quay and creator of this plate, must have been an artist/architect in another life. Not only are his flavours well thought out, the way he shapes and presents his food, for me anyhow, is extraordinary.
